Thanks, Jeremy! I had a great time devising my own etouffee, and am really happy with the results. Many thanks to Adam and to you for inspiration to make all of these wonderful New Orleans dishes. I'm proud to have helped make so much money for those who are in need right now.

I grew up in Louisiana. I make really good crawfish etouffee.
